Fresh Broccoli Salad

This broccoli (yes, raw broccoli!) salad is ALL about texture. It’s crazy fast and easy to make and can be served anywhere. The salad is absolutely beautiful, and each bite has the perfect combination of creamy and crunchy. And the best part? It’s *gasp!* healthy!

Broccoli Salad

Ingredients:

2 broccoli florets
Grated carrots
Gorgonzola
1 avocado
1 lime
Chive and basil, chopped
Olive oil
Dash of salt

Cut broccoli into small, bite-sized pieces and place into a medium-sized bowl. Use a grate to cut as many carrots as you’d like and add to bowl. Chop up your herbs (I used chives and basil), and add to bowl. Take one avocado, cut into pieces, and - you guessed it - add to your bowl. Toss with olive oil, sea salt, and lime juice. Top with gorgonzola cheese, mix again, and serve!
