Fried Zucchini Blossoms - The Best (Italian) Summer Snack!
Fried flowers? I know, it’s different. But trust me - this recipe is SO fast and easy, and it’s an absolutely delicious crowd pleaser. A popular starter dish in Italy, these fried zucchini blossoms are light and crispy and utterly addictive. Zucchini blossoms are in abundance right now at farmers markets so get them while you can!
You often see them stuffed with cheese but I find that cumbersome and time consuming - so why not line the plate with it instead and just scoop it up as you go? This hack makes for the perfect way to enjoy zucchini blossoms without the time suck. Watch the video below to see how it’s done!
Fried Zucchini Blossoms
Ingredients:
Vegetable or olive oil for frying
1/2 cup self-rising flour
1/2 cup seltzer water
1 cup ricotta
Handful of chopped basil
Dash of salt
In a pan, heat oil over medium-high heat until it’s around 350-400 degrees - the oil shouldn’t be bubbling, but will bubble when a wooden spoon or chopstick is placed in the oil. In a separate bowl, combine the flour and seltzer water together. One at a time, coat each zucchini blossom with the batter, shaking off any excess. Place in pan without overcrowding. Cook until golden brown, flipping once - around 2 minutes total. Transfer to a paper towel and sprinkle with salt.
Serve on a plate with ricotta and chopped basil, and enjoy!
