We Really Do Scream for Ice Cream
I know the thought of making your own homemade ice cream can seem daunting, but it really isn’t! All you need is an ice cream mixer and a freezer, and you’re good to go. I absolutely love to make ice cream for my son (and let’s be real, myself too) using any berries I can find. This time, I decided to use blueberries. Check out how to make it below!
Blueberry Ice Cream
Ingredients:
3 cups half and half (or 1.5 cups milk and 1.5 cups heavy cream)
2 tbsp cornstarch
Sugar to taste (I like to start with 1 tablespoon and if I need more I add it later, but up to you!)
3 cups pureed blueberries (or any combination of berries)
Simmer the half and half with the cornstarch and sugar for about 10 minutes until it has reduced, stirring every few minutes. Allow the mixture to fully cool (you can place it in a freezer for a bit if you want to speed it up). Add in the fruit and churn, according to your ice cream maker's instructions. Keep in the freezer for up to two months!
