Make This Summer a Smash

No matter how much you love potatoes, you can love them even more when they’ve been smashed. You can get the best of both worlds - the crispy exterior with the mashed, creamy interior. They are not as heavy as mashed potatoes, but still filling, quick to make, and the ingredients and flavors make it just as nostalgic.

Quick Smashed Potatoes

Ingredients: 
1 pound small potatoes
Olive oil 
Salt
1/4 cup of chives
3 tablespoons butter
1/4 teaspoon garlic powder

Turn on your broiler. Place the potatoes on a microwave-safe plate and drizzle a healthy serving of olive oil on top. Cook for 3 minutes or until the potatoes are soft enough to mash. With a masher or fork, ‘smash’ the potatoes so that the skin breaks but not so much that they fall apart. Place the potatoes on a lined baking sheet, add a dash of salt, and put under the broiler (4-6 inches away). Cook for 5 to 7 minutes until they start to brown. While the potatoes cook, chop the chives and then combine them with the butter, garlic, and onion powder. Add to the potatoes when they are finished and serve hot.
