The Salmon Dish that Screams Summer

Salmon with Zucchini Scales

Ingredients:
2 zucchini
4 oz goat cheese
1 lemon, juiced
2-pound salmon filet
Dash of salt
Thyme

Preheat the oven to 400 degrees. Cut the zucchini into thin discs using a mandolin (or knife). In a bowl, whisk the goat cheese and lemon until fully combined. Place the salmon on a sheet tray and spread the goat cheese mixture evenly on top of the salmon. Sprinkle with salt. Place the zucchini discs close to and on top of each other, in a “scale” pattern. Top with another healthy dash of salt and a few thyme leaves. Place in the oven for 12 to 16 minutes, depending on how you like your salmon cooked. When the internal temperature has reached 140 degrees, take it out of the oven and serve.
