Everyone Loves a Savory Pancake
Everyone totally loves a savory pancake, right? Right?! Well if not - trust me. These bean pancakes are absolutely delicious, filling, and are a perfect snack for adults and kids alike.
Bean Pancakes with Feta and Cilantro
(Makes 12 pancakes)
Ingredients
1 can black beans, drained
1 shallot
2 cloves garlic
1 egg
3/4 cup rolled oats
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1 cup feta cheese
Bunch of cilantro
Place a griddle on the stove and turn the heat on to medium. While the griddle is coming up to temperature, add the beans, shallot, garlic, egg, oats, vinegar, and salt into a blender. Blend fully until the mixture has a batter-like consistency.
Pour pancake-sized circles onto the griddle (you can use butter or oil if you are not using a nonstick griddle). Cook for 2 to 3 minutes, or until the bottom has browned. Flip and cook for 2 to 3 minutes more, until the pancake is cooked but still fluffy in the middle.
Remove from the griddle and top with crumbled feta and sprigs of cilantro.
