I don't know about you but I am a little sick of hearing about ramen. It's great and all, but surely we can find something else to try.

The issue with noodle soup, though, is that a lot of noodles can't stand the test of time. After awhile your noodles start to break down and often you're left wanting to go back to that ramen standard.

But Little Tong Noodle Shop's Simone Tong has the answer. She is preaching the gospel of mixian, a rice noodle from Yunnan in China.
