Orange Rhubarb Galette Recipe

There's a moment in the spring when oranges are still good and rhubarb is just coming out and There's a moment in the spring when oranges are still good and rhubarb is just coming out and you can use them both. And it's lucky because their flavors meld perfectly together. This galette is so simple and looks so pretty that it almost feels unfair. Make them ahead or serve them warm -it'll work either way!

Makes 8 single-serving galettes

 

Ingredients

2 packaged puff pastries 

3 stalks of rhubarb 

1 orange, peeled

1/4 cup sliced almonds 

1/2 tablespoon sugar  

8-10 large mint leaves, finely chopped

Preheat your oven to 375 degrees. Cut your puff pastries into 4 pieces each. Chop the rhubarb and oranges. Combine them with the almonds, sugar and mint leaves. Add the rhubarb orange mixture onto the center of the puff pastries and then fold the edges over so that there is still a lot of center showing but the edge is quite substantial. Place the galettes on a baking sheet lined with parchment paper. Put in the oven and bake for 35 to 40 minutes or until the rhubarb is soft and the pastry has browned. Remove and allow to cool for at least 5 minutes.
