The S. Pellegrino Young Chef 2015 competition in Milan brought chefs from across the world to compete for judges like Massimo Bottura, Grant Achatz, Jordi Roca and Gaston Acurio. But what does it mean to be a young chef in today's culinary world? We spoke to contestants and judges to find out
